Beschreibung | Brunello di Montalcino wird ausschliesslich aus Sangiovese Trauben gewonnen, welche in der Gegend von Montalcino, in der Provinz Siena angebaut werden. Nach dem vorsichtigen Abpressen des frisch vergorenen Weines kommen die hochwertigen Traubenreste, also der Trester in die Destillerie, wo während der schonenden Destillation Alkohol und Aromastoffe extrahiert werden. Dieser geschmeidige Riserva di Grappa di Brunello Invecchiata wurde nach den Platz im Quartier San Pancrazio, dem Campo Corbolini benannt und reift während 3 Jahren in Eichenfässern. Durch die sehr langsame Oxidation erhält das Destillat die typische Farbe und den Geschmack eines gereiften Grappas. Der letzte Schritt ist die Zugabe von destilliertem Wasser. Der Grappa wird anschliessend heruntergekühlt und filtriert. Die verbliebenen Rückstände werden entfernt, damit er seinen seidigen Glanz erhält. |
